Black and Blue Salmon Salad

Ingredients
- 2 ea C. Wirthy Blackened Salmon
- 4 cup Kale torn into 2″ pieces
- 1/2 tsp Kosher Salt
- 1/2 cup Radicchio
- 1/4 cup Figs, Dried sliced
- 1/2 cup Strawberries, sliced
- 1/2 cup Pears sliced
- 1/4 cup Pecans Halves toasted
- 1/4 cup Red Onion, sliced
- 1/4 cup Applewood Smoked Bacon fully cooked, crispy & crumbled
- 1/4 cup Crumbled Blue Cheese
- 1/4 cup Blue Cheese Dressing preferred brand
- 2 tbsp Balsamic Glaze aged glaze
Directions
- Prepare the Salmon according to the package instructions.
- Add the kale and kosher salt to a large bowl and rub together for approximately 15 seconds to begin softening the kale. Add the radicchio and toss well.
- Arrange the kale and radicchio on the bed of a large serving plate. Working in batches, artfully arrange the figs, strawberries, pears, pecans and red onions across the platter.
- Add the fully cooked Blackened Salmon portions atop the salad. Garnish with the bacon, blue cheese crumbles and a drizzle of balsamic glaze and serve with your preferred brand of blue cheese dressing on the side.
