1/2 cup basil leaves
1/3 cup mint leaves
3 tablespoon minced seeded jalapeno pepper
2 tablespoons white vinegar
2-1/2 teaspoons minced peeled fresh ginger
1 teaspoon sugar
2 teaspoons fish sauce
2 garlic cloves, chopped
4 (6oz.) Atlantic Salmon fillets (about 1 inch thick)
1/2 teaspoon salt
1/8 teaspoon black pepper

1/4 cup finely chopped fresh basil
4 lime wedges

Instructions:
Prepare grill.
Combine the first 8 ingredients in the blender or food processor, and process until smooth. Set aside.
Sprinkle salmon fillets with salt and black pepper. Place the fish on a grill rack coated with cooking spray, and grill for 5 minutes on each side or until fish flakes easily when tested with a fork.
Serving
Suggestions:
Spoon sauce over fish, and garnish with chopped basil and the lime wedges.
